Kevin’s Holiday Recipe

  • Ground Beef – 1 lb
  • Oil – 2 tbs
  • Onions, chopped – 2 med.
  • Garlic, minced – 1 clove
  • Celery, cut thin diagonal – 2 cups
  • Green Pepper, cut in thin strips – 1
  • Tomatoes, 1 lb 12 oz can – 1
  • Salt – 2 tsp
  • Cayenne Pepper – 1 large dash
  • Chili Powder – 1 to 1 1/2 tbs
  • Red Wine 1/2 cup
  • Kidney Beans, Drained – 1 can
  • Mushrooms, 4 oz, drained – 1 can

Brown meat in oil. Add onion, garlic, celery, and green pepper. Saute lightly. Add tomatoes and liquid drained from beans and mushrooms. Combine salt, pepper, chili pepper, cayenne pepper, and wine. Mix well. Add to meat mixture and cook slowly for 1 hour. Add mushrooms and beans. Simmer until doneā€¦

I usually make 2-3 recipes to feed the family.
